Abstract

Pulp durian monthong merupakan salah satu produk olahan PT Welco. PT Welco merupakan salah satu perusahaan perusahaan yang bergerak dalam industri coklat, permintaan konsumen terhadap produk durian mendorong PT Welco untuk menghasilkan pulp durian yang siap diolah dan diproduksi menjadi produk olahan durian. Pabrik PT Welco terletak di Jalan Kromowijoyo 1-3, Surabaya, Indonesia. Strukur organisasi yang diterapkan oleh PT Welco adalah struktur organisasi lini dengan jumlah karyawannya sebanyak 92 orang. Bahan baku dalam proses pengolahan pembuatan pulp durian adalah durian monthong, proses pengolahannya dimulai dengan freezing, thawing, sortasi, penimbangan, pengemasan, dan penyimpanan beku. Dalam 1 batch proses PT Welco bisa mengirim 15 kg pulp durian monthong. Kemasan yang digunakan adalah kemasan primer berupa plastik LLDPE dan kemasan sekunder berupa kardus. Penerapan sanitasi yang dilakukan di PT Welco meliputi sanitasi peralatan, ruang produksi, dan pekerja. Pengendalian mutu yang dilakukan oleh PT Welco dimulai dari bahan baku, proses produksi, produk akhir, dan proses penyimpanan. Limbah yang dihasilkan oleh PT Welco terdiri dari limbah padat dan cair. Pengangkutan dan pembuangan limbah tersebut dilakukan oleh pihak ketiga yang telah bekerjasama dengan PT Welco untuk limbah padat dan pembuangan ke badan sungai untuk limbah cair yang sudah sesuai standar BPOM.
