Abstract

Sirup merupakan salah satu produk minuman yang populer dan banyak dikonsumsi. Karakteristik utama sirup adalah tekstur kental dan rasa yang khas karena mengandung gula. Salah satu perusahaan yang memproduksi sirup adalah UD. Levis yang berdiri sejak tahun 1985 di Surabaya dengan luas bangunan 652 m2. Perusahaan ini terletak di Jl. Petemon Barat No. 171 Kelurahan Kupang Krajan, Kecamatan Sawahan, Surabaya, Jawa Timur. Jumlah karyawan pabrik UD. Levis sebanyak 17 orang. Tujuan dilakukan praktek kerja industri pengolahan pangan di perusahaan UD. Levis adalah untuk mengetahui cara proses pengolahan sirup HFS dan mengetahui prosedur pengendalian mutu produk untuk menghasilkan produk jadi yang sesuai dengan standar dan spesifikasi yang telah ditentukan. Proses pembuatan sirup yaitu sortasi, pencampuran, pengadukan, pengisian, penyegelan, pelabelan, pengemasan, penyimpanan. Kapasaitas Produksi sirup di UD. Levis per harinya adalah sebanyak 1600 liter. Bahan baku pembuatan sirup terdapat beberapa jenis yaitu HFS (High Fructose Syrup), air, essence, atau perisa artifisial. Sedangkan bahan pembantu berupa sakarin, asam benzoat, asam siklamat, dan pewarna makanan. Penetapan pengendalian mutu yang dilakukan oleh UD. Levis yaitu ISO 9001:2015. Daya listrik yang digunakan di UD. Levis sebanyak 5.500 VA untuk keperluan mesin pengaduk, mesin penyegel botol,penerangan, dan peralatan kantor. Limbah yang dihasilkan oleh UD.Levis adalah limbah cair hasil sanitasi peralatan pengolahan sirup.
