Abstract

Roti merupakan salah satu produk olahan pangan yang cukup banyak ditemui di Indonesia.Roti sudah dikenal sejak dahulu yang terbuat dari bahan baku tepung terigu, air dan bahan lainnya. Perusahaan Roti Matahari Pasuruan merupakan perusahaan roti yang didirikan Almarhum Yacobus Laksamana sejak tahun 1955. PerusahaanRoti Matahari bertempat di Jalan Soekarno Hatta no: 42-44, Kelurahan Karang Anyar Kecamatan Gading Rejo, Kabupaten Pasuruan. Dalam sektor pemasaran yang UD. Roti Matahariawalnya terbatas hanya di dalam wilayah Kota Pasuruan namun dapat berkembang hingga beberapa area di Jawa Timur dan saat ini hingga beberapa wilayah diluar Jawa Timur seperti Jakarta. Perusahaan Roti Matahari memiliki ciri khas dalam proses pembuatan rotinya, yaitu pada proses pencampuran adonan rotinya yang menggunakan metode sourdough, sourdough merupakan suatu campuran yang terdiri atas tepung dan air yang difermentasi dengan BAL (Bakteri Asam Laktat) baik yang berasal dari kontaminan alami tertentu dari tepung atau dari suatu kultur starter yang mengandung satu atau lebih BAL. Varian produk roti yang dibuat oleh Perusahaan Roti Matahari yakni blencong (kering), warmball (basah putih, basah cokelat, basah darmo, dan basah kismis). kasur (basah), rounde (basah putih dan kering putih), sisir biasa (basah putih dan kering putih) dan sisir roombutter (basah cokelat, basah putih, kering cokelat, dan kering putih). Perusahaan Roti Matahari menjaga kualitas produknya dengan melakukan pengawasan terhadap proses produksi, serta bahan baku yang digunakan sehingga membuat produk roti yang berkualitas.
