Abstract

Kopi merupakan salah satu produk yang digemari oleh sebagian besar masyarakat khususnya kalangan remaja hingga dewasa. PT Kopi ”X” yang berlokasi di Jawa Timur merupakan salah satu perusahaan fast moving consumer goods (FMCG yang bergerak dibidang kopi instan dengan inovasinya kopi instan 3-in-1 dalam bentuk serbuk serta gula kopi yang terpisah. Produk yang diproduksi dijual pada beberapa ritel serta toko kelontong dengan kemasan berbentuk sachet dalam bentuk kemasan renteng atau karton. Bahan baku yang diperlukan dalam pengolahan adalah beberapa jenis kombinasi biji kopi pilihan seperti Arabika dan Robusta yang diperoleh dari beberapa supplier dari dalam dan luar Jawa Timur, sedangkan bahan pembantu yang digunakan adalah gula rafinasi yang akan dikemas dalam kemasan renteng yang terdiri atas bubuk kopi serta gula rafinasi. Sertifikasi keamanan pangan yang telah dimiliki pabrik adalah HACCP, GMP, FSSC 22000, dan ISO 22000 serta dilakukan pengendalian mutu dengan kontrol pada sanitasi pabrik, gudang, ruang produksi, mesin dan peralatan, serta pekerja. Pengendalian mutu dilakukan dari segi penerimaan bahan baku, proses produksi, bahan pengemas, serta proses distribusi produk. Pengolahan limbah pada pabrik dilakukan pada limbah cair, padat, dan gas serta melakukan pemanfaatan limbah cair dengan metode reverse osmosis dan metode lumpur aktif sehingga air dapat aman untuk digunakan kembali untuk konsumsi maupun produksi.
