Abstract

Bihun merupakan salah satu produk mie berbahan baku non terigu. Bihun merupakan jenis mie dari beras yang paling banyak dikenal. Bihun dibuat dari beras melalui proses ekstrusi sehingga memperoleh bentuk seperti benang. Dalam usaha penganekaragaman makanan, bihun memberikan arti tersendiri. Kehadiran bihun mempunyai arti yang sangat strategis dalam upaya meningkatkan ketahanan pangan dan mengurangi ketergantungan kepada bahan pangan import. Hal inilah yang mendorong PT. Tunas Melati Perkasa memfokuskan usaha dibidang bihun yaitu bihun dengan bahan dasar pati jagung. Proses pengolahan bihun jagung melalui tahap Mixing, Penyemprotan Uap Panas,Slitting, Cooling, Steaming, Cutting, Sortasi Bihun, Pengeringan, Penimbangan, dan Pengemasan. Bahan pengemas bihun jagung ini meliputi kemasan primer dan sekunder. Mesin yang digunakan dalam proses produksi ada dua macam yaitu mesin proses dan mesin packing. Sanitasi mesin dilakukan seminggu sekali dan pengendalian mutu dilakukan sejak penerimaan bahan baku hingga produk akhir.
