Abstract
Gula merupakan salah satu dari sembilan bahan pokok (sembako) kebutuhan pangan yang sangat penting bagi kebutuhan dalam rumah tangga maupun industri makanan dan minuman. Kebutuhan gula yang sangat besar membuat keseluruhan proses pembuatan gula perlu dipelajari agar dapat dipahami dan dihasilkan produk yang sesuai standar dengan proses yang tepat dan efisien yang terjadi di lapangan. PT. PG. Kebon Agung merupakan pabrik gula yang memproduksi Gula Kristal Putih 1 (GKP 1) yang dikemas dengan karung. Bahan untuk memproduksi GKP ada dua macam yaitu bahan baku dan bahan pembantu. Bahan baku yang digunakan adalah tebu dan bahan pembantu yang digunakan adalah air imbibisi, kapur tohor, belerang, asam fosfat, flokulan, fondant, dan desinfektan. Proses pengolahan GKP di PG. Kebon Agung dibagi dalam tujuh stasiun proses baik secara kontinyu maupun batch, yang meliputi stasiun timbangan, gilingan, pemurnian, penguapan, masakan, puteran, dan pembungkusan. Kapasitas produksi PT. PG. Kebon Agung sebanyak 12.000 ton/hari. PT. PG. Kebon Agung memproduksi Gula Kristal Putih 1 (GKP 1) dari bahan baku tebu dengan produk samping yang dihasilkan adalah tetes dan blotong.
