Abstract
Tahu merupakan salah satu makanan berbahan baku kedelai yang kaya akan sumber protein. Kedelai merupakan salah satu hasil pertanian bahan makanan, karena jumlah dan mutu protein yang dikandung sangat tinggi yaitu sekitar 40% dan susunan asam amino essensialnya lengkap. Tahu yang disukai oleh konsumen adalah berkualitas baik, memiliki niliai gizi, tanpa bahan pengawet dan pewarna sehingga perlu penaganan khusus agar tidak mudah mengalami kerusakan atau terkontaminasi. UD. Lumintu merupakan salah satu produsen tahu berlokasi di Blitar yang memproduksi tahu sejak tahun 1984 yang telah didistrbusikan ke berbagai wilayah Blitar dan TulungAgung, sehingga UD. Lumintu sebagai tempat praktek Kerja Industri Pengolahan Pangan mampu memberikan banyak pengalaman dan bermanfaat. Praktek Kerja Industri Pengolahan Pangan di UD. Lumintu yang dilaksanakan pada tanggal 10 juni 2015 sampai dengan tanggal 23 juni 2015. UD. Lumintu berlokasi di Jalan Bogowonto Timur No 29 Rt 01, Rw 03 Kelurahan Pakunden, Kecamatan Sukorejo, Blitar, Jawa Timur. Jumlah Karyawan UD. Lumintu adalah 26 orang. Proses pengolahan tahu meliputi penimbangan, perendaman, pencucian, penggilingan, pemasakan, penyaringan, penggumpalan, pencetakan dan pengepresan, pemotongan. Pengawasan mutu dilakukan pada bahan baku, setiap proses produksi, produk akhir, dan pengemasan
