Abstract

UD. Sumber Inti Rasa merupakan perusahaan yang memproduksi produk-produk bakery seperti roti, pastry, kue kering, kue basah, kue tart dan donat. UD Sumber Inti Rasa berdiri sejak tahun 1935, berpusat di Jalan Jemursari 128-130 dan memiliki 7 cabang, yaitu Jl. Mawar, Jl. Pucang Anom, Gwalk, Jl. Rungkut Lor, Jl. Undaan Kulon, Dharmahusada Indah dan Jl. Raya Kupang Jaya. Bangunan UD. Sumber Inti Rasa yang memproduksi roti merk “Roti In” terdiri dari 3 bagian yaitu toko, pabrik dan kantor. UD. Sumber Inti Rasa beroperasi dengan struktur organisasi fungsional. Dalam kegiatan operasionalnya, UD. Sumber Inti Rasa dibagi menjadi 4 divisi besar yaitu bagian produksi, keuangan dan administrasi, sales serta personalia. Bahan-bahan yang digunakan untuk proses produksi di UD. Sumber Inti Rasa terdiri dari tepung terigu protein tinggi, telur, air, ragi, NaCl, susu, gula pasir, butter, isian manis, isian asin dan pasta pandan. Produk roti diproduksi dengan proses penimbangan, pencampuran, resting, pengovenan, pendinginan dan pengemasan. Kemasan yang digunakan UD. Sumber Inti Rasa yang memproduksi roti merk “Roti In” terdiri dari kemasan primer, sekunder dan tersier. Alat-alat yang digunakan UD. Sumber Inti Rasa yang memproduksi roti merk “Roti In” adalah mixer, oven, dan bread slicer. UD. Sumber Inti Rasa yang memproduksi roti merk “Roti In” menggunakan daya berupa SDM berjumlah 100 orang, listrik yang bersumber dari PLN, Pembangkit Listrik Tenaga Surya (PLTS) serta genset, gas yang bersumber dari tabung LPG 12 kg serta air yang berasal dari PDAM dan Air Minum Dalam kemasan (AMDK). Sanitasi alat, kantor, dan seluruh ruang produksi dilakukan setiap hari. Untuk mengawasi mutu produk yang dihasilkan, terdapat supervisor khusus. Limbah cair disalurkan melalui saluran khusus sedangkan limbah padat akan diberi obat dan dibuang ke saluran pembuangan limbah.
