Abstract

Tingkat konsumsi mi instan yang tinggi oleh masyarakat Indonesia membuat banyak perusahaan mi instan bermunculan di Indonesia. Salah satu produsen mi instan yang telah berdiri sejak lama dan menjadi pelopor berkembangnya industri mi instan di Indonesia yaitu PT. Indofood CBP Sukses Makmur Tbk. Bahan baku utama pembuatan mi instan yaitu tepung terigu, tepung tapioka, dan air. Bahan baku pembantu dalam pembuatan mi instan yaitu minyak goreng dan alkali. Proses pembuatan mi instan di PT. Indofood CBP Sukses Makmur Tbk. Divisi Mi Cabang Jawa Timur melalui beberapa tahapan yaitu pencampuran, pembentukan adonan lembaran, pembentukan untaian mi, pengukusan, pemotongan dan pelipatan, penggorengan, pendinginan, dan pengemasan. Sistem produksi di PT. Indofood CBP Sukses Makmur Tbk. Divisi Mi Cabang Jawa Timur dilakukan secara kontinyu. Bahan pengemas primer yang digunakan oleh PT. Indofood CBP Sukses Makmur Tbk. Divisi Mi Cabang Jawa Timur yaitu plastik OPP, laminasi, EPS, dan kertas. Bahan pengemas sekunder yang digunakan yaitu karton. PT. Indofood CBP Sukses Makmur Tbk. Divisi Mi Cabang Jawa Timur menerapkan sistem sanitasi sesuai pedoman yang ada serta pengawasan mutu dari penerimaan bahan baku hingga produk jadi untuk menjamin kualitas dari mi instan yang dihasilkan.
