Abstract

PT. Krispi Industri Indonesia merupakan pabrik produsen yang memproduksi berbagai macam inovasi produk kerupuk yang telah berdiri sejak tahun 2019 oleh pendiri yang telah berpengalaman dalam industri pengolahan kerupuk selama 20 tahun. PT. Krispi Industri Indonesia berada di Dusun Banyu Urip RT. 001/ RW. 001, Desa Mojorejo, Pungging, Mojokerto, Jawa Timur. Salah satu produk kerupuk yang diproduksi adalah kerupuk udang mentah. Struktur organisasi di PT. Krispi Industri Indonesia menggunakan bentuk orangisasi lini dan staf. Penggunaan bahan baku dalam produksi yakni udang jerbung yang sudah dikupas dan dibekukan dari pemasok, tepung tapioka, gula, dan garam. Proses pengolahan diawali dengan tahap proses sortasi dan pencucian udang beku, penggilingan bahan baku, penimbangan, pencampuran hingga homogen, pengekstruksian, pengukusan, pendinginan secara bertahap, pemotongan, pengeringan, pengemasan, dan penyimpanan dalam kemasan plastik inner yang ditutup dengan kotak kardus. Sanitasi di PT. Krispi Industri Indonesia mencakup sanitasi bahan baku, ruang produksi, mesin dan peralatan, serta pekerja. Pengendalian mutu diterapkan terhadap bahan baku, proses pengolahan, dan produk akhir sebelum pengiriman.
