Abstract

PT Garudafood Putra Putri Jaya, Tbk. Gresik divisi biskuit merupakan pabrik pengolahan biskuit yang memproduksi produk wafer stick, wafer book, cracker, dan lain-lain. Salah satu produknya adalah wafer stick Chocolatos. Garudafood didirikan oleh Darmo Putro dan Pusponingrum di Pati, Jawa Tengah dalam bentuk PT Tudung yang memproduksi kacang kulit pada tahun 1979. Pabrik Garudafood divisi biskuit didirikan pada tahun 1997, berlokasi di Jalan Krikilan KM 28, Krikilan, Dusun Larangan, Kecamatan Driyorejo, Kabupaten Gresik. Lokasi pabrik berada pada gang kawasan industri yang dekat dengan jalan tol dan jalan raya. Bahan baku yang digunakan dalam pembuatan adonan wafer stick Chocolatos adalah tepung terigu, air, gula, dan shortening, sedangkan bahan pembantunya adalah leavening agent, bahan berbasis susu, telur, dan coklat bubuk. Krim coklat isian wafer stick dibuat dari campuran krim coklat dari supplier dan BS Crack. Pengolahan krim coklat terdiri dari proses penghancuran, pengecilan ukuran, dan pencampuran. Proses pengolahan wafer stick terdiri dari pencampuran, pemanggangan, penggulungan pita wafer stick dan pengisian krim, pemotongan, penurunan suhu, pengemasan, dan deteksi sinar x-ray. Kemasan primer dari produk Chocolatos adalah flexible packaging dengan lapisan OPP dan VMCPP. Mesin yang digunakan dalam produksi wafer stick Chocolatos adalah juicer, premix, ball mill, dan tempering, mixer, baking, cooling tunnel, horizontal packaging, cartoning, carton sealer, dan x-ray. Sumber daya yang digunakan adalah sumber daya manusia, listrik, gas, dan air. Sanitasi yang dilakukan adalah sanitasi pabrik, mesin dan alat, bahan baku dan pembantu, air, dan pekerja. Pengendalian mutu dilakukan terhadap bahan baku dan pembantu, proses pengolahan, dan produk akhir. Produk Chocolatos memiliki target pasar semua golongan usia, kecuali bayi usia 0-12 bulan dengan wilayah pemasaran seluruh Indonesia dan beberapa negara lain.
