Abstract

Susu pasteurisasi merupakan salah satu produk olahan susu yang banyak dikonsumsi oleh masyarakat karena memiliki kandungan gizi yang tinggi. Susu pasteurisasi dibuat melalui proses pemanasan pada suhu 63°C selama 30 menit atau 72°C selama 15 detik. Pasteurisasi bertujuan untuk membunuh bakteri patogen dan tidak berspora yang terkandung dalam susu sehingga mampu memperpanjang umur simpan produk. Setelah proses pasteurisasi dilakukan penyimpanan susu pada suhu 4oC. Penyimpanan pada suhu rendah bertujuan untuk mengambat laju katalis enzim sehingga mampu mengambat aktivitas metabolism mikroba dan memperpanjang umur simpan susu. Salah satu lembaga yang bergerak dalam bidang penerimaan dan pengujian susu adalah KUD “BATU” yang merupakan bagian dari PT. Nestle Indonesia. KUD “BATU” bergerak dalam menerima, menguji, dan menampung susu dari peternakan yang berada di sekitar kota Batu. KUD “BATU” menerima susu dari para peternak yang kemudian disimpan pada suhu 4oC dan diuji untuk diketahui kualitas dari susu. Pengujian yang dilakukan meliputi uji alkohol, berat jenis (BJ), antibiotik (AB), Methylene Blue Reductase Time (MBRT) dan kadar lemak dengan metode Gerber. Susu yang telah lulus pengujian akan dikirimkan ke 2 tempat yang berbeda, yaitu Wisata Edukasi Susu Batu (WESB) dan susu dengan kualitas terbaik akan dikirimkan ke PT. Nestle di kota Pasuruan, Jawa Timur. Susu yang dikirimkan ke WESB akan diolah menjadi susu pasteurisasi merek “Nandhi” Murni dengan varian rasa vanila, coklat, melon, kopi, strawberry, dan original.
