Abstract

Wafer krim adalah adonan cair yang dicetak di antara dua lempengan panas dan dipanggang di waktu yang ditentukan serta memiliki 2 hingga 3 lapisan yang disebut wafer sandwich dengan krim yang dipotong sesuai ukuran yang sudah ditentukan. Salah satu produsen wafer krim yaitu PT Bangun Anugerah Persada yang sudah berdiri sejak tahun 1976 dari usaha rumahan. Lokasi PT Bangun Anugerah Persada sekarang terletak di Jalan Kelud I No. 10, Desa Bambe, Driyorejo, Gresik, Jawa Timur, dengan jumlah karyawan sebanyak 50 orang. Proses pembuatan wafer krim di PT Bangun Anugerah Persada menggunakan sistem kontinu. Jenis produk yang diproduksi yaitu wafer krim dengan kemasan Family Pack, Picnic dan kaleng dengan varian rasa cokelat, vanila dan stroberi. Penerapan proses sanitasi sudah mengikuti aturan dariBPOM. Sertifikasi yang dimiliki yaitu Halal MUI, BPOM dan MD. Kapasitas produksi dalam satu hari yaitu 1.440 karton dengan umur simpan wafer selama delapan bulan. Jenis kemasan yang digunakan untuk pengemas primer yaitu laminasi dengan bahan PET dan pengemas sekunder dengan bahan karton dan kaleng. Distribusi produk dilakukan ke kota Surabaya, Sidoarjo, Kediri, Mojokerto, Lumajang, Jember, Yogyakarta dan sekitarnya hingga luar pulau ke Makassar, Palu, Kendari, Lampung hingga Nusa Tenggara Barat dan Nusa Tenggara Timur
