Abstract

Indonesia merupakan negara maritim yang menghasilkan komoditi laut yang melimpah, salah satunya adalah ikan tuna. Ikan tuna merupakan komoditi perikanan yang banyak diminati masyarakat, karena memiliki kandungan protein yang tinggi dan lemak yang rendah. Namun ikan tuna memiliki sifat yang mudah rusak akibat adanya cemaran mikrobiologis maupun fisik. Maka perlu upaya pencegahan untuk menghindari kerusakan pada ikan tuna, yaitu dengan proses pengalengan. Pengalengan ikan tuna dapat memperpanjang umur simpan produk ikan tuna sehingga dapat disimpan dalam jangka waktu lama dan dapat didistribusikan secara luas. PT Aneka Tuna Indonesia merupakan salah satu perusahaan pengalengan ikan tuna terbesar di Indonesia. PT Aneka Tuna Indonesia memiliki joint venture dengan Itochu Corporation dan Hagoromo Food Corporation yang memproduksi berbagai produk ikan tuna dalam kaleng dan pouch yang dipasarkan secara lokal maupun diekspor ke negara lain. Proses pengolahan ikan tuna dimulai dari penerimaan bahan baku dari supplier, penyimpanan pada cold storage, pelelehan, pemotongan, pemasakan, pembersihan awal, pembersihan akhir, filling, seaming, sterilisasi, labelling dan penyimpanan produk akhir. Praktek Kerja Industri Pangan (PKIPP) di PT Aneka Tuna Indonesia bertujuan untuk menambah wawasan mengenai proses pengolahan ikan tuna, pengendalian mutu , sanitasi dan pengolahan limbah yang baik.
