Abstract

Perkebunan di Indonesia merupakan salah satu sub sektor pertanian yang berperan penting dalam pembangunan pertanian. Salah satu perkebunan yang telah cukup lama dibudidayakan di Indonesia adalah perkebunan teh. Berdasarkan proses pengolahannya, teh dibagi menjadi empat jenis, yaitu teh putih (non-fermented), teh hijau (non-fermented), teh oolong (semi-fermented), dan teh hitam (fermented). PT. Perkebunan Nusantara XII afdeling Wonosari bergerak dalam bidang perkebunan yang membudidayakan tanaman teh dan mengolahnya menjadi bubuk teh hitam kering yang diekspor hingga ke Timur Tengah dan Eropa. Total karyawan di PT. Perkebunan Nusantara XII berjumlah 323 orang. Luas Total perkebunan teh yang dimiliki PT. Perkebunan Nusantara XII adalah 714,42 Ha. Varietas tanaman teh yang terdapat di PT. Perkebunan Nusantara XII Kebun Wonosari adalah Assamica dan diproduksi menggunakan metode Crushing, Tearing, Curling (CTC). Pengolahan pucuk daun teh hingga menjadi bubuk teh hitam kering dilakukan berdasarkan Standard Operating Procedure (SOP) agar mendapatkan kualitas bubuk teh hitam kering yang siap diekspor. Faktor-faktor yang menentukan mutu teh antara lain bahan baku (pucuk), ketepatan pemetik, penanganan, proses pengolahan, dan bahan pengemas yang digunakan. Selain memperhatikan beberapa faktor tersebut, dalam proses pembuatan bubuk teh hitam kering PT. Perkebunan Nusantara XII Kebun Wonosari menetapkan Standard Sanitation Operating Procedure (SSOP) agar sanitasi bahan baku, produk, pekerja, dan lingkungan tetap terjaga. Proses produksi bubuk teh hitam kering menghasilkan limbah cair dan padat yang langsung diolah sehingga menghasilkan pupuk kompos dan pupuk hijau. Pupuk tersebut berguna untuk menyuburkan tanaman teh.
