Abstract

Udang merupakan salah satu produk pangan hasil laut memiliki kandungan gizi yang dibutuhkan oleh manusia. Namun, udang memiliki umur simpan yang relatif rendah sehingga diperlukan pembekuan agar dapat memeperpanjang umur simpannya. PT. Surya Alam Tunggal (PT. SAT) merupakan salah satu industri yang bergerak di bidang pembekuan udang dan telah melakukan ekspor ke beberapa negara. Metode pembekuan yang diterapkan adalah metode pembekuan cepat dengan suhu rendah, menggunakan alat Contact Plate Freezer dan Tunnel Freezer. Produk yang diproduksi oleh PT. SAT berupa Block Frozen (BF), Added Value Product (AVP), dan Individual Quick Freezing (IQF). Proses pengiriman produk menggunakan container box dengan suhu - 20°C, sebelumnya produk udang disimpan didalam cold storage dengan sistem penyimpanan yang diterapkan adalah first in first out (FIFO). Sistem sanitasi yang diterapkan PT. SAT meliputi bahan baku, bahan pembantu, peralatan, pekerja, lingkungan produksi dan pabrik. PT. SAT melakukan pengawasan mutu mulai dari bahan baku, bahan pembantu, proses produksi, hingga mutu produk akhir.
