Abstract

Sebagai negara maritim, Indonesia memiliki sumber daya laut yang sangat berlimpah. Simping adalah salah satu sumber daya laut yang bernutrisi tinggi. Tingginya kandungan nutrisi membuat simping mudah mengalami penurunan kualitas sehingga simping membutuhkan penanganan pasca panen yang tepat. Salah satu upaya untuk mencegah penurunan kualitas dapat dilakukan dengan memperpanjang umur simpan simping dengan mengolah simping menjadi produk simping beku. PT. Inti Luhur Fuja Abadi (PT. ILUFA) adalah perusahaan yang bergerak dalam pengolahan hasil perikanan dengan cara pembekuan ke manca negara. Produk yang ditawarkan oleh PT. ILUFA berupa produk pembekuan simping dan lainnya. Proses pembekuan simping meliputi tahap yaitu penerimaan bahan baku, serta penanganan seperti sortasi, pembukaan cangkang, pemisahan organ, pencucian, penataan, pembekuan, glazing, pengemasan, metal detecting, dan pemberian label. Bahan tambahan yang digunakan dalam proses pembekuan simping adalah es batu dan air. Hasil produksi simping beku menghasilkan limbah cair dan padat.
