Abstract

CV. Kidung Agung Food merupakan perusahaan yang didirikan pada tahun 1997. CV. Kidung Agung Food berlokasi di Jl. Sumber Kembar no 1. Dampit, Malang-Jawa Timur dan berdiri di area tanah seluas 5.500m2. Perusahaan ini merupakan perusahaan berbentuk persekutuan komanditer (CV) dengan struktur organisasi garis/lini. Jumlah pekerja di CV. Kidung Agung sejumlah 132 orang, yang terdiri dari pekerja harian, borongan, dan staff. Proses produksi di CV. Kidung Agung Food dilakukan selama 9 jam per hari. Perusahaan ini memiliki lima divisi produk makanan salah satunya adalah wafer stick. Wafer stick merupakan makanan ringan berbentuk silinder, memiliki kadar air rendah serta bersifat renyah. Produk wafer stick ini berbahan tepung terigu, tepung maizena, tepung ketan putih, gula pasir, margarin, lesitin, minyak goreng, vanili, baking powder, air, garam, Tersier Butil Hidroquinon (TBHQ), susu bubuk full cream, coklat bubuk dan flavor coklat. Proses pembuatan wafer stick terdiri dari tiga tahap yaitu pembuatan adonan krim wafer, pembuatan adonan kulit wafer stick dan pembuatan wafer stick. Pengolahan wafer stick membutuhkan mesin, seperti mesin ball mill untuk membuat krim, mesin turbo mixer untuk pencampur adonan kulit wafer stick, dan mesin pengemas. Sistem penyimpanan di Gudang CV. Kidung Agung Food menerapkan FIFO (First in First Out) dan FEFO (First Expired First Out). CV. Kidung Agung Food menggunakan listrik sebagai sumber daya utama yang digunakan untuk proses produksi. Penerapan sanitasi sudah dilakukan meliputi sanitasi untuk pekerja, ruang penyimpanan bahan baku, ruang produksi, ruang penyimpanan hasil produksi, dan lingkungan. Pengendalian mutu juga dilakukan CV. Kidung Agung untuk menjaga kualitas produk yang dihasilkan. Pengendalian mutu di CV. Kidung Agung Food meliputi bahan baku, proses produksi dan produk akhir. Limbah yang dihasilkan dari proses produksi wafer stick adalah dalam bentuk padat dan cair.
